It can only be produced in a small dairy around the small town of Burtrask. The name literally means cheese (ost) from Vasterbotten County, in the very north of Sweden. It is served at the Nobel Prize awards banquet and is generally referred to as the ‘King of Swedish cheese’. Vasterbottensost tastes great sprinkled on top of pasta, or in a cheese quiche. It’s very versatile and can be used in variety of cheesy dishes – think cauliflower cheese, potato gratin, on a pizza or in a toastie with a slice of ham and tomato. It melts beautifully and brings a sharp, bold flavour to any dish. Try on a slice of warm rye Finntoast, adding some sliced cucumber or pepper for a touch of freshness.
