Danish cheeses are a little softer in general than say the standard brunost or herrgardsost from the neighbour countries. This is the reason they most often use this type of wire slicer instead of the planer. Works really well with Havarti, Aseda, Thems, Riberhus and similar slightly softer cheeses.
